Cooking Secrets to Make Life Easier
BROWN SUGAR
1 T. unsulphured, blackstrap molasses - Add 1 T. or more for darker sugar
1 c. organic sugar
Molasses is the “good stuff” that is refined from sugar. Blackstrap unsulphured molasses is healthiest and contains a plethora of nutritional benefits.
POWDERED SUGAR
2-3 T. organic cornstarch
Choose organic to avoid genetically modified corn.
1 c. of sugar- regular white sugar is not only refined but full of harmful chemicals.
Shop your discount store for bulk prices. Beware of beet sugar as it is most likely genetically modified.
Place sugar and cornstarch in blender or food processor. Grind for several pulses into a fine powder.
While it is common knowledge that sugar is unhealthy, it’s doubtful we’ll all be giving it up anytime soon. You might as well make your own and feel a bit better about consuming it.
PUMPKIN PIE SPICE
4 t. ground cinnamon
2 t. ground nutmeg
2 t. powdered ginger
1 t. ground allspice
1 t. ground cloves
Mix ingredients well and store in airtight container. Makes about 3 tablespoons.
Purchase a small amount of herbs & spices preferably organic, in bulk from a reputable vendor. Store bought spices in jars or containers are months, if not years old and their price when calculated by the pound is astronomical!
POULTRY SEASONING
3 ½ t. ground white pepper
1 ½ t. ground sage
1 t. dried marjoram
1 t. dried thyme
1 t. dried savory
1 t. powdered ginger
½ t. ground allspice
½ t. ground nutmeg
Mix ingredients well and store in airtight container. Makes about 3 tablespoons.
FIESTA SEASONING
Great for tacos, fajitas, burritos, or any dish that needs a spicy, zesty flavor.
3 T. chili powder (See recipe for DIY chili powder)
2 T. cumin
2 t. garlic powder
1 T. paprika
1 ½ t. mineral salt
such as pink salt or good quality sea salt
2 t. black pepper
2 t. oregano
1 t. onion powder
Measure all ingredients into a bowl. Grind/puree them into a fine powder. Store in an airtight bottle in a cool, dark place. Makes about 8 tablespoons.
CHILI POWDER
2 T. paprika
2 t. oregano
1 ¼ t. cumin
1 ¼ t. garlic powder
1 ¼ t. cayenne powder
(adjust for your desired heat intensity)
¾ t. onion powder
Measure all ingredients into a bowl. Grind/puree them into a fine powder. Store in an airtight bottle in a cool, dark place. Makes about 5 tablespoons.
CAJUN SPICE SEASONING
Let the Good Times Roll! (Laissez les bons temps rouler)
Use this seasoning to create your own dish with the unique flavor of New Orleans.
2 t. mineral salt, pink or good quality sea salt
2 t. garlic powder
2 ½ t. paprika
1 t. black pepper
1 t. onion powder
1 t. cayenne powder
1 ¼ t. dried oregano
1 ¼ t. dried thyme
½ t. red pepper flakes
Measure all ingredients into a bowl. Grind/puree them into a fine powder. Store in an airtight bottle in a cool, dark place. Makes about 4 tablespoons.
