Delicious Quinoa Salad

Easy, nutritious and beautiful, this Quinoa (pronounced keen-wah) salad includes a rainbow of healthy foods. Wonderful as a salad or the main event. Use organic as much as your circumstances allow, for your health’s sake, and for the planet!

½ c. sunflower oil Or Bragg’s olive oil another good choice is

Zoe Extra Virgin Olive Oil


Do not heat olive oil above medium heat- it becomes toxic

1 c. quinoa

2 c. organic chicken or vegetable broth

2 c. cooked black beans – To enhance digestion and nutrient absorption, follow Eden’s recipe for soaking/cooking your beans.  

1 c. corn

2 c. firm tomatoes, chopped

1 c. red, yellow and green sweet peppers, chopped

¼ c. black olives, sliced

2-3 medium green onions, or 1/3 c. red onion, thinly sliced

½ c. fresh parsley, chopped

1/3 c. fresh cilantro, chopped

¼ c. lemon or lime juice

½ t. cumin

½ t. Himalayan pink salt

In a medium saucepan, heat oil to medium heat. Add quinoa and toast for 5 minutes. Stir in broth, cumin and salt. Heat to boiling. Reduce heat to low; cover and simmer till liquid is absorbed. About 15-20 minutes. Fluff with fork and set aside to cool.


In a medium bowl whisk together ¼ c. oil, lemon or lime juice and pepper. Add remaining ingredients. Combine with quinoa.
