This classic favorite is traditionally served on white french bread. You can make a healthier version using organic wholegrain bread or crackers. Also very scrumptious as a dressing for your salad. This is so delicious you’ll want to make a lot!
¼ c. organic extra virgin olive oil
4 medium tomatoes
3-4 garlic cloves, minced or pressed
2-4 T. Parmesan cheese
½ t. Unrefined salt (Celtic or Himalayan)
¼ t. fresh cracked black pepper

Combine all ingredients except bread in a medium sized bowl. Refrigerate 1 hr. Bring to room temperature before serving. Lightly toast bread under broiler. Spread with Bruschetta mixture and serve immediately. Give each person a small bowl of dip and bread slices. Garnish with fresh parsley.
Lettuce wrap- Place a spoonful of mixture on a large piece of romaine and roll up.
